From the toasty bread on our breakfast table, the crunchy Kraut in our Rueben sandwich, the umami-packed soy sauce on our rice, to the delicious bottles of beer and wine, fermentation enriches our daily diet.

On this special night, which is presented as part of the Botanica Lumina program, we invite you to join us and dive deep into ideas and ingredients that are outside the box and explore the best produce of the season.

Restaurant Botanic has entered a new era.

Its latest evolution is the appointment of new executive chef Justin James, executive chef at Melbourne’s celebrated fine diner Vue de Monde for five and a half years. Before that, he did stints in the kitchens of Noma, Dan Barber’s Blue Hill at Stone Barns and Eleven Madison Park (which earned the number one position in the 2017 World’s 50 Best Restaurants awards). It’s an enviable CV, to say the least.
